Skillet-sizzled strips of pork tenderloin and peppers are served with brown rice and topped with cheese in this tasty Southwestern-flavored dish.

Number Of Ingredients 7

2 Tbsp. KRAFT Lite Zesty Italian Dressing
1 lb. pork tenderloin, cut into strips
1 env. TACO BELLĀ® Taco Seasoning Mix, divided
1 cup each red and green pepper strips and zucchini slices
2 cups instant brown rice, uncooked
1-3/4 cups water
1/2 cup KRAFT 2% Milk Cheddar Cheese

Steps:

  • Heat dressing in large skillet on medium-high heat. Add meat; sprinkle with half the seasoning mix. Stir-fry 2 min.
  • Add vegetables, rice, water and remaining seasoning mix; mix well.
  • Bring mixture to boil; cover. Simmer on medium heat 5 min.; top with cheese. Let stand, covered, 5 min.
