SWEET POTATO PUDDING image

This recipe comes from my great Grand mother. She made it at Thanksgiving and Christmas.

Number Of Ingredients 8

2 1/2 c nondairy creamer
6 c grated raw sweet potatoes
3 eggs
1 c sugar
2 tsp cinnamon
1/2 c slivered almonds
2 Tbsp butter
1/2 c bourbon or rum if desired

Steps:

  • 1. Preheat oven to 300 degrees.
  • 2. Pour nondairy creamer into a bowl, add sweet potatoes.
  • 3. In a separate bowl beat together eggs, sugar, cinnamon, and slivered almonds and then mix with sweet potato mixture.
  • 4. Pour into a greased 2-quart casserole and dot with butter.
  • 5. Bake for 45 minutes. Just before serving, pour bourbon or rum( if desired).
  • 6. Top with chopped pecans.
