Sweet Potato Paste (Salad) image

This is a salad served in restaurants in Butte, Montana. It's easy and tasty even if the name sounds strange.

Number Of Ingredients 7

1 1/2 lbs sweet potatoes, boiled or 1 1/2 lbs canned sweet potatoes
3 -4 stalks celery, diced
4 hard-boiled eggs, chopped
3 -4 scallions, chopped fine
1/4 teaspoon salt, to taste
2 tablespoons Durkee's sauce, Sandwich and Salad
1/3 cup mayonnaise

Steps:

  • Mash sweet potatoes.
  • Add other ingredients.
  • Season to taste with salt.
  • Chill.
