Susan's All Grain Muffins image

High fiber whole wheat,banana,flax seed muffin. This is a recipe that I have worked on for some time and is still a work in progress.

Number Of Ingredients 14

2 large mashed bananas
2 large eggs
1/3 cup canola oil
1 cup low-fat buttermilk
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 cups millers unprocessed natural bran
1 1/2 cups organic whole wheat flour
1 1/2 teaspoons cinnamon
1 teaspoon ground cloves
1 teaspoon vanilla
3/4 cup raisins
1/2 cup honey
3 tablespoons whole flax seeds

Steps:

  • Preheat oven 400 degrees.
  • Mash the bananas.
  • Add all the wet ingredients to the bananas and mix thoroughly.
  • Add the dry ingredients, except the raisins, to the wet ingredients and mix with electric mixer 2-3 minutes.
  • Add the raisins last and mix thoroughly.
  • Spray muffin tins with a grease release (Pam) and fill to the top of muffin tin.
  • Tap muffin tins on counter a couple of times to settle any bubbles in mixture.
  • Bake. Enjoy.
