CHILLED FRUIT SOUP image

Number Of Ingredients 9

3 cups fresh or frozen blueberries, blackberries, or raspberries (packed without sugar)
2 cups water
2 tablespoons lemon or lime juice
Splenda to equal 1/2 cup sugar
1/4 teaspoon ground nutmeg or ginger
1 3-inch cinnamon stick
1/8 teaspoon salt
1 pint plain yogurt or flavored to match fruit (use low fat sugar free yogurt)
lemon or lime slices for garnish

Steps:

  • In a large saucepan, combine fruit, water, lemon juice, Splenda, nutmeg, cinnamon stick, and salt. Cover and simmer 10 minutes. Discard cinnamon stick. Pour fruit mixture into a blender or food processor. Process until smooth. Pour into a large bowl. Cover. Refrigerate to chill. To serve, stir yogurt into fruit mixture until smooth. Pour into individual bowls or serve in a chilled soup tureen. Garnish with lemon slices.
