Strawberry Tiramisu image

I love new recipes, that's why I love this site. I found this one and had to try it. LOVE IT!!! I found it on the epicurious.com website. As always, I made a few changes to make it mine. I hope you enjoy it.

1 1/4 c strawberry preserves
2/3 c plus 4 t. orange juice
1 lb cream cheese, softened
1 1/3 c chilled whipping cream
1/3 c sugar
1 tsp vanilla extract
2 small pound cakes
1 1/2 lb strawberries

Steps:

  • 1. Whisk preserves and 2/3 cup orange juice in a 2-cup measuring cup. Place cream cheese and 4 T. orange juice in a large bowl and beat together until smooth. Add cream, sugar, and vanilla and beat to soft peaks.
  • 2. Hull and slice strawberries. Spread 1/2 cup preserve mixture over bottom of 13x9-inch glass baking dish. Arrange slices of pound cake to cover bottom of dish. Spoon 3/4 cup preserve mixture over pound cake, then spread 2 1/2 cups cream cheese mixture over the pound cake. Arrange 2 cups sliced strawberries over cream cheese mixture. Repeat layering with remaining pound cake, preserve mixture, and cream cheese mixture. Cover with plastic and chill at least 8 hours or overnight.
  • 3. Arrange the rest of the strawberries over the top just before serving.
  • 4. NOTE: Most Tiramisu recipes use ladyfingers. They are hard to find in my small town, so I started using pound cake and I find that I like that better. You can use ladyfingers if you prefer.
