1 1/4 cups strawberry preserves
1/3 cup plus 4 tablespoons Cointreau or other orange liqueur
1/3 cup orange juice
1 pound mascarpone cheese, room temperature
1 1/3 cups chilled whipping cream
1/3 cup sugar
1 teaspoon vanilla extract
52 (about) crisp ladyfingers (boudoirs or Savoiardi)
1 1/2 pounds strawberries, divided

Steps:

  • Whisk preserves, 1/3 cup Cointreau, and orange juice in 2-cup measuring cup. Place mascarpone cheese and 2 tablespoons Cointreau in large bowl; fold just to blend. Using electric mixer, beat cream, sugar, vanilla, and remaining 2 tablespoons Cointreau in another large bowl to soft peaks. Stir 1/4 of whipped cream mixture into mascarpone mixture to lighten. Fold in remaining whipped cream.
  • Hull and slice half of strawberries. Spread 1/2 cup preserve mixture over bottom of 3-quart oblong serving dish or a 13x9x2-inch glass baking dish. Arrange enough ladyfingers over strawberry mixture to cover bottom of dish. Spoon 3/4 cup preserve mixture over ladyfingers, then spread 2 1/2 cups mascarpone mixture over. Arrange 2 cups sliced strawberries over mascarpone mixture. Repeat layering with remaining lady fingers, preserve mixture, and mascarpone mixture. Cover with plastic and chill at least 8 hours or overnight.
  • Slice remaining strawberries. Arrange over tiramasù and serve.

Steps:

  • In a large bowl, beat cream until soft peaks form. In another bowl, beat cheeses until light and fluffy. Beat in cooled chocolate, 1/2 cup confectioners' sugar and vanilla. Fold in 2 cups whipped cream., Brush half of the ladyfingers with half of the orange juice; arrange in a 13x9-in. dish. Spread with 2 cups cream cheese mixture; top with half of the strawberries. Brush remaining ladyfingers with remaining orange juice; arrange over berries., Gently stir remaining confectioners' sugar into remaining cream cheese mixture; fold in remaining whipped cream. Spread over ladyfingers. Top with remaining strawberries. Refrigerate until serving. If desired, drizzle with chocolate syrup before serving.

1 quart fresh strawberries
1-1/4 cups cold milk
1 package (3.4 ounces) instant vanilla pudding mix
1 package (8 ounces) cream cheese, softened
4 tablespoons strong brewed coffee, room temperature, divided
2 cups whipped topping
1 package (3 ounces) ladyfingers, split
6 ounces bittersweet chocolate, grated

Steps:

  • Set aside three strawberries for garnish; slice the remaining strawberries. In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. In a large bowl, beat cream cheese until smooth; gradually beat in 2 tablespoons coffee. Beat in pudding. Fold in whipped topping., Brush remaining coffee over ladyfingers. Line the bottom of a 3-qt. trifle or glass serving bowl with half of the ladyfingers. Top with half of the sliced berries, grated chocolate and pudding mixture; repeat layers. Cut reserved berries in half; place on trifle. Cover and refrigerate for 4 hours or overnight.

500g fresh strawberry, washed, trimmed and cut in half
1/2 lemon, juiced
1 tbsp granulated sugar
1 tbsp cointreau or dark rum
2 large egg whites
50g granulated sugar
2 large egg yolks
250g mascarpone cheese, at room temperature
1 tbsp honey
150ml single cream
1/2 lemon, juiced
10 Savoiardi or sponge fingers, roughly crushed
1 tbsp instant coffee
2 tbsp amaretto
100ml hot water
1 tbsp cocoa powder
*Transparent glasses to serve would be more attractive. I used the glasses with 9cm across each.

Steps:

  • To marinate the strawberries, mix all the ingredients together gently and put in the fridge for 24 hours.
  • To make the sponge, arrange the crushed sponge fingers into the bottom of each glass. Mix the remaining ingredients and allow to cool.
  • To make cheese cream, in a bowl, place the egg yolks and honey lightly beaten, add the mascarpone cheese and stir until smooth. Pour the single cream and lemon juice into the bowl and mix together well.
  • For the meringue, in a separate bowl, whisk the egg whites with half of the sugar (25g) until well mixed , add the remaining sugar, continue whisking till the stiff peaks form, then fold them into the cream cheese mixture.
  • Pour the cooled coffee mixture over the crushed sponge finger in the serving dishes. Line the marinated strawberry along the inner-side of glasses (the cut facing against the glass, see photo), spread the mascarpone mixture over the coffee soaked sponge and the strawberries. Put in the fridge for at least 3 hours. Dust with cocoa powder just before you serve.

This light, roll your eyes, taste bud tantalizer has become a traditional wedding anniversary dessert treat that I've been making for my husband and me for 17 years. You might call it a happy hubby dessert! This is my easy version of a classic with the elimination of raw eggs and a wonderful fresh strawberry layer and puree base. It's delicioso! It is made to accommodate two extra large portions.

1 pint fresh strawberries
½ cup confectioners' sugar
1 cup mascarpone cheese
½ cup heavy cream
2 tablespoons coffee-flavored liqueur
18 ladyfingers
⅓ cup chilled espresso
½ teaspoon unsweetened cocoa powder

Steps:

  • Cut off the tops of the strawberries and slice the berries. Reserve 2 large whole berries for garnish.
  • In a blender, place 2 cups of strawberries and 2 tablespoons confectioners sugar; blend to puree and set aside.
  • In a medium bowl, combine mascarpone cheese, 1/4 cup cream, 1/4 cup sugar, and liqueur; beat with an electric mixer on medium-high speed for 1 to 1 1/2 minutes until thickened.
  • Place 6 ladyfingers on a serving plate and brush each with approximately 1 teaspoon cold espresso coffee. Spread or pipe out 1/2 of the cheese mixture over the ladyfingers, and layer with half of the sliced strawberries.
  • Repeat with the next 6 ladyfingers, espresso, remaining cheese mixture, and sliced strawberries; top with remaining 6 ladyfingers.
  • In a small mixing bowl, combine 1/4 cup heavy cream with 2 tablespoons sugar; beat with an electric mixer on medium-high speed until just whipped, approximately 1 minute. Spread cream evenly over top layer of ladyfingers.
  • Dust cocoa over whipped cream, and garnish with 2 reserved strawberries. Pour strawberry puree onto two serving plates. Cut tiramisu in half, and place onto puree.

1 1/2 cups heavy cream or 1 1/2 cups whipping cream, divided

3 ½ cups fresh strawberries, hulled, divided
7 tablespoons white sugar, divided
2 lemon, juiced, divided
2 tablespoons water, or as needed

Steps:

  • Reserve 3 or 4 strawberries for the garnish. Slice 1/2 of the remaining strawberries and place in a bowl with 2 tablespoons sugar and the juice of 1 lemon. Stir to combine and set aside.
  • Transfer remaining strawberries into a blender. Add 2 1/2 tablespoons sugar and remaining lemon juice. Blend until smooth.

This is no regular tiramisu-it boasts the best aspects from both strawberry cheesecake and the classic ladyfinger dessert. Swapping zingy limoncello in for traditional rum and opting for a no-bake cheesecake filling makes this a perfect summer mashup dessert.

1 cup limoncello
1 1/3 cups granulated sugar
16 ounces strawberries, hulled
3/4 cup heavy cream
Three 8-ounce packages cream cheese, at room temperature
Zest and juice of 1 large lemon (about 2 teaspoons zest and 1/4 cup juice)
2 tablespoons sour cream
1 teaspoon pure vanilla extract
36 to 40 ladyfingers (about 13 1/2 ounces)
1/4 cup strawberry jam

Steps:

  • Combine the limoncello and 1/3 cup of the sugar in a large bowl. Chop 12 ounces of strawberries (about 10 strawberries) into 1/2-inch chunks (you should have about 2 cups chopped) and add to the limoncello. Stir to combine and set aside to macerate while you make the cheesecake filling.
  • Whip the heavy cream in a medium bowl with a handheld electric mixer on medium-high speed until fluffy peaks form, 1 to 2 minutes; set aside.
  • Beat the cream cheese, lemon zest, lemon juice, sour cream, vanilla and the remaining 1 cup sugar in a large bowl with the electric mixer on medium-high speed until smooth and creamy, 2 to 3 minutes. Gently fold in the whipped cream with a large rubber spatula.
  • Strain the limoncello into a medium bowl (you will need this to soak the ladyfingers) and fold the strawberries into the cream cheese mixture.
  • Working quickly, gently dip the ladyfingers into the limoncello for 1 second on each side, then stand them around the ring of an 8-inch springform pan. Layer the ladyfingers on the bottom of the pan, cutting the cookies as needed to make one even layer. Spoon 1/3 of the cheesecake mixture on top and spread with an offset spatula. Repeat two more times with another layer of limoncello-dipped ladyfingers and 1/3 of the cheesecake mixture to make 3 layers total.
  • Thinly slice the remaining 4 ounces of strawberries and decorate the top of the cake. Microwave the jam in a glass measuring cup until it is warmed and melted, 15 to 30 seconds. Brush the berries with the jam to glaze them. Refrigerate until the cheesecake is firm to the touch and the ladyfingers are softened, 6 hours and up to overnight.
  • Loosen the clasps of the pan to release the pan ring before slicing and serving.

1/2 cup kirsch or framboise
1/4 cup water
3 large egg yolks
3 to 5 tablespoons sugar
1/2 cup heavy cream
1 1/2 pints strawberries
1/3 cup strawberry preserves
8 ounces mascarpone cheese
4 ounces savoiardi biscuits or ladyfingers
1 tablespoon cocoa

Steps:

  • Mix the kirsch or framboise with the water. Set aside.
  • Combine the egg yolks and three tablespoons sugar in a stainless-steel bowl that will fit partway into a heavy saucepan. Using a whisk or a hand-held mixer, beat the egg yolks and sugar until they are thick and light.
  • Add water to the saucepan, enough to bring to a simmer without quite touching the bottom of the bowl. Place the saucepan with the bowl in it over medium heat and continue beating. Gradually beat in one-third cup of the diluted liquor. Continue beating until the mixture is thick, light and nearly hot. Do not allow it to become too hot or the eggs will curdle.
  • Remove the bowl from the saucepan and place it in a bowl of ice and water. Continue beating until the mixture is cold, then refrigerate it. Whip the cream until stiff and fold it into the egg-yolk mixture. Refrigerate again.
  • Hull the strawberries and slice them. Sweeten if necessary. Refrigerate.
  • Mix the preserves with the mascarpone and refrigerate.
  • Up to an hour before serving, arrange half the biscuits on a square or round platter or in a shallow serving bowl about nine inches in diameter. Sprinkle them with half the remaining diluted liquor. Top with half the sliced strawberries. Spread with the mascarpone and preserves mixture. Top with the remaining biscuits. Sprinkle with the remaining diluted liquor. Top with the remaining strawberries. Spread the whipped-cream-and-egg-yolk mixture over the strawberries. Dust lightly with sifted cocoa and refrigerate until ready to serve.

8 ounces bittersweet chocolate, chopped, plus another 1-ounce chunk for garnish
8 sugar cones (the dark brown ones)
30 espresso beans, crushed or 4 tablespoons ground espresso
3 pints ripe strawberries
3 tablespoons fresh lemon juice
7 tablespoons granulated sugar
Pinch salt
1 cup heavy cream
1 cup mascarpone cheese

Steps:

  • In a small microwave-safe bowl, melt 8 ounces of chocolate in 30 second intervals in the microwave until smooth. Dip the top of each cone into the chocolate so there is a 1-inch rim, then roll in the crushed or ground espresso. Place the dipped cones on a wax paper-lined plate and refrigerate. When firm, about 20 minutes, remove from the refrigerator and set cones, dipped side up, inside small glasses so they stand upright. Spoon the remaining melted chocolate evenly into the sugar cones and return (glass and all) to the refrigerator.
  • Meanwhile, hull and quarter 2 pints of strawberries and puree them in a food processor with 2 tablespoons of the lemon juice, 5 tablespoons of the sugar and a pinch of salt. Strain the puree through a fine-mesh strainer into a small saucepan. Bring to a simmer over medium-high heat, and cook until reduced by half, about 35 minutes, stirring frequently. Pour into a small bowl and chill the puree until cold.
  • In the bowl of a stand mixer fitted with a whisk attachment, whip the heavy cream and mascarpone to stiff peaks and then fold in the puree in 2 batches. Refrigerate until firm and set, 1 to 2 hours.
  • Just before serving, hull the remaining 1 pint of strawberries and cut them lengthwise into 1/4-inch slices. Toss with the remaining 1 tablespoon of lemon juice and 2 tablespoons of sugar.
  • To assemble: Spoon strawberries into the cones until they are 1/4 full. Top that with approximately 1/4 cup of the mascarpone mixture, using an ice cream scoop that has been dipped in warm water. Garnish with shaved bittersweet chocolate and refrigerate until ready to serve.

1 tub (8 oz.) COOL WHIP Whipped Topping (about 3 cups), thawed
1 pkg. (7 oz.) crisp ladyfingers
1 can (12 oz.) evaporated milk, divided
3 cups halved fresh strawberries

Steps:

  • Beat cream cheese and COOL WHIP in medium bowl with mixer until blended.
  • Place half the ladyfingers in single layer on bottom of 9-inch square pan. Pour 1/2 cup milk evenly over ladyfingers; cover with half the cream cheese mixture.
  • Pour remaining milk into shallow dish. Dip remaining ladyfingers, 1 at a time, into milk, turning to evenly moisten both sides of each ladyfinger with milk; place over cream cheese layer in pan. Pour any remaining milk over ladyfinger layer; cover with remaining cream cheese mixture. Top with strawberries.
  • Refrigerate 1 hour.

-Created for Ready Set Cook #12 (Summer 2008). This is a combination of a traditional tiramisu and one that is decidedly not traditional! Be sure to use the soft variety of ladyfingers. Cook time is chilling time.

16 ounces mascarpone cheese
1/2 cup powdered sugar
6 tablespoons sugar-free chocolate syrup
12 ounces frozen non-dairy topping, thawed (I use fat free)
2 (3 ounce) packages ladyfingers (ladyfinger sponge cakes)
6 tablespoons no-sugar-added strawberry preserves
1 lb fresh strawberries, cleaned and sliced
1 ounce dark chocolate, shaved

Steps:

  • In a large bowl, combine the mascarpone, sugar, and chocolate syrup, until mixture is light and fluffy. This can be done with a mixer or a wooden spoon (I use a spoon). Gently stir in the whipped topping, being careful not to deflate it too much.
  • Place one half of the ladyfinger halves on the bottom of a 9-inch springform pan, tearing some to cover the bottom of the pan as much as possible (you may have one or two leftover).
  • Brush half the strawberry preserves over the ladyfingers. You may need to microwave the preserve briefly to loosen it up & make it easier to brush.
  • Top the ladyfingers with half the strawberry slices then spread half of the mascarpone mixture over the berries. Repeat layers, brushing ladyfingers with preserves, topping with strawberries, and ending with the remaining mascarpone mixture.
  • Cover and refrigerate for 4 hours or overnight. Garnish with chocolate shavings before serving.

3 1/2 cups cold skim milk
2 (1 ounce) packages sugar-free instant vanilla pudding mix, fat free jello brand
2 (7 ounce) packages ladyfingers, split
8 ounces fat-free whipped topping (or strawberry topping)
2 1/2 cups sliced strawberries
1 tablespoon water

Steps:

  • Mix sliced strawberries with water in a bowl, cover with plastic wrap and put in the refrigerator until strawberries are chilled and have softened and have given up their juices, about an hour.
  • Beat cream cheese in a large bowl with an electric mixer until creamy.
  • Gradually add milk and beat until well blended.
  • Add pudding mix and beat on low speed for about a minute or until blended.
  • Line the bottom of a 13x9 inch pan with half of the lady fingers.
  • Lightly brush the tops of the lady fingers with some of the juice from the strawberry mixture.
  • Top with layers of half each of the pudding mixture, whipped topping and strawberries.
  • Repeat all layers, arranging the strawberries on top.
  • Refrigerate at least 3 hours or until ready to serve.

Steps:

  • Set aside three strawberries for garnish; slice the remaining strawberries.
  • In a bowl, whisk milk and pudding mix for 2 minutes.
  • Let stand for 2 minutes or until soft-set. In a large mixing bowl, beat cream cheese until smooth; gradually beat in 2 tablespoons coffee.
  • Beat in pudding.
  • Fold in whipped topping.

1 qt fresh, red ripe strawberries
1/4 c granulated sugar
8 oz cream cheese, room temperature
1/8 c sweetened condensed milk (may substitute vanilla flavored refrigerated coffee creamer)
3 Tbsp powdered sugar (confectioners sugar)
1 small pinch salt
1 tsp lemon juice
2-3 drops real lemon extract
1/2 tsp real vanilla extract
4 oz whipped topping, thawed (1/2 tub, use remainder for garnish)
1 pkg ladyfingers cookies (7 oz.)

Steps:

  • 1. Gather all ingredients.
  • 2. Wash and hull berries.
  • 3. Into medium bowl, slice 1/2 of the berries (about 3 slices for medium-size, 4-5 for large).
  • 4. Sprinkle with 1/2 of the granulated sugar.
  • 5. Slice and add remaining berries.
  • 6. Sprinkle with remaining granulated sugar. Mix gently with a large spoon, lifting berries from bottom to top. Cover & refrigerate for 1 hour.
  • 7. In mixing bowl, using an electric mixer, beat cream cheese until light and fluffy.
  • 8. Add sweetened condensed milk, powdered sugar, salt, lemon juice, lemon extract, and vanilla extract. Mix until well combined.
  • 9. Using spatula, fold 1/2 tub whipped topping into cream cheese mixture until well combined; set aside.
  • 10. Gently mix berries. Drain juice into a rimmed dish or pie pan; set berries aside.
  • 11. Place ladyfingers, one at a time, into strawberry juice. Roll lady finger twice to cover with juice. (Do not let the lady finger "soak" in the juice or it will fall apart.)
  • 12. Place in an 8"x8" glass dish (if doubling the recipe, use 9"x13"). Repeat steps 11 and 12 until 1/2 of the ladyfingers are moistened with juice and cover the bottom of 8"x8" dish.
  • 13. Evenly spread half of cream cheese mixture over prepared ladyfingers.
  • 14. Evenly cover with half of sliced berries.
  • 15. Repeat layers: moistened ladyfingers, cream cheese mixture, strawberries (if there is juice remaining from rolling ladyfingers, pour over this layer of cookies before adding cream cheese mixture. End with berries.).
  • 16. Cover with plastic wrap and refrigerate for a minimum of 6 hours (24 hrs is preferable) before serving.
  • 17. When ready to serve, garnish with remaining whipped topping and fresh mint leaves, if desired.
  • 18. Cover & refrigerate leftovers.

1/4 cup caster sugar
300 g mascarpone
1/2 cup whipped cream
15 strawberries, hulled and quartered
1/3 cup strong coffee
2 tablespoons rum or 2 tablespoons brandy
14 ladyfingers
cocoa, to dust
1 strawberry (for garnish)

Steps:

  • Using an electric beater, beat together egg yolks and sugar until pale and thick.
  • Beat in mascarpone.
  • Whisk egg whites to soft peaks.
  • Fold cream then egg whites into mascarpone mixture.
  • Fold in strawberries.
  • Combine coffee and rum or brandy.
  • Dip half the sponge fingers briefly in the mixture to moisten the outside.
  • (Do not soak fingers in mixture, they will fall apart) Line the base of a serving bowl with the sponge fingers.
  • Spoon half the mascarpone mixture into the bowl.
  • Cover with remaining sponge fingers that have been dipped in the coffee mixture.
  • Spoon over remaining mascarpone mixture.
  • Cover and refrigerate for at least 4 hours.
  • Just before serving, sift a little cocoa over the tiramisu.
  • Garnish with strawberry halves.
