Stir-Fry Salad with Rice image

This Asian main-dish salad tosses mixed vegetables, cooked brown rice, chicken strips and greens with an Italian and soy sauce dressing.

Number Of Ingredients 7

1 cup long-grain brown rice, uncooked
1 Tbsp. oil
1 lb. boneless skinless chicken breasts, cut into thin strips
3 cups cut-up mixed fresh vegetables (broccoli, carrots, pea pods and red peppers)
1/2 cup KRAFT Lite House Italian Dressing
2 Tbsp. soy sauce
1 pkg. (10 oz.) torn salad greens

Steps:

  • Cook rice as directed on package, omitting butter and salt.
  • Meanwhile, heat oil in large skillet on medium heat. Add chicken; cook and stir 4 min. or until done. Add vegetables; cook and stir 2 min. or until vegetables are crisp-tender.
  • Mix dressing and soy sauce until blended. Toss salad greens with chicken mixture and rice in large bowl. Serve with dressing mixture.
