SPINACH SALAD WITH ORANGES & WARM GOAT CHEESE image

Yield 4 servings

Number Of Ingredients 12

2 small navel oranges, sectioned
6 oz. fresh, mild goat cheese log(I use 1 oz per person.)
1/3 cup pecans, lightly toasted, finely chopped (I use Spiced Pecans)
Dressing:
1 Tbsp orange juice
1 tsp whole grain Dijon mustard
1 tsp white wine vinegar
1/4 tsp salt
pinch sugar
2 Tbsp extra virgin olive oil
Spinach (1 lb trimmed) or 1 pkg baby spinach
Red onion, thinly sliced

Steps:

  • Cut goat cheese in 1/4's & pat in a disk. (I use 1 oz/person.) Pat pecans over cheese. Bake until heated through (5 min.). Whisk orange juice, mustard, salt and sugar. Whisk in olive oil. Toss with greens. Add oranges. Add goat cheese and serve.
