Spicy Turkey-Bulgur Burgers image

Recipe for these burgers are in the book, The Spelt Cookbook by Helga Hughes. She wrote; By mixing spelt bulgur with ground turkey breast, and spicy mustard, you'll quickly create a spicy burger that's low on fat and high on taste and nutrition!

1/2 c spelt bulgur
1/2 c boiling water
1 1/2 c ground turkey breast
1/4 c 1/4 c plus 2 tbsp egg substitute (or 1 egg)
1 yellow or red onion minced for mix
1 1/2 tsp dried marjoram
1/2 tsp sea salt or to taste
1/4 tsp freshly grd white pepper
1 Tbsp spicy mustard (or bbq or thousand island)
8 spelt buns (recipe on my home)
1/2 c lowfat mayonaise, expellor pressed oil and cage free eggs)
8 lettuce leafs or choice of greens or sprouts
8 slices of onions if you please
8 sliced tomato as an option
1/2 c pickle relish or pickle slices

Steps:

  • 1. Place the bulgur in a 2-quart heatproof bowl. Add the boiling water, and set the mixture aside for 5 minutes.
  • 2. Add turkey, egg or substitute, onion, marjoram, salt, pepper, and mustard to the bulgur mixture and mix well.
  • 3. Using floured hands, form the mixture into 8 patties as thin as possible for a flatter size meat. Coat a ceramic skillet with organic olive oil and/or spray, and cook the patties over medium heat for 7 minutes on each side, or until browned and crisp. Transfer the patties to a cookie sheet to drain, works well, or a plate, because the oil makes the burger taste better, no need to drain on paper towels.
  • 4. Cut each spelt bun in half. Spread the bottom half of each bun with condiments of your choice. Follow with a patty burger, and remaining vegetables. Serve!
