I made this recipe because I often can or freeze extra pork broth which surprisingly I often have in the house. So I'm always looking for ways to use it. This is a delicious pork chop and goes great with cooked white rice, egg noodles or mashed potatoes!

Steps:
- 1. Heat canola oil in pan over medium high heat.
- 2. sift 2/3 cup flour with salt & pepper to taste. Dredge pork chops in flour and brown in hot oil.
- 3. When chops are nicely browned, remove them to a rack to drain; set aside, keep warm.
- 4. Add butter to pan and saute mushrooms and onions until softened.
- 5. Sprinkle 1/3 cup leftover flour over mushrooms and onions and stir until smooth and incorporated.
- 6. Add pork broth or chicken broth and stir until smooth and beginning to thicken.
- 7. Return pork chops to pan and simmer covered for 25 minutes.
- 8. Add more salt & pepper to taste if needed.
- 9. Garnish with fresh, chopped parsley!
- 10. Serve with white rice, noodles or mashed potatoes.
