Slow Cooked Pork for tamales or sandwiches image

Great for anything that pulled pork can go on. I always make this when my work place has any type of get together and I never have left overs to bring home.

5-7 lb pork shoulder roast
2-3 Tbsp oil
62 oz vegetable or pork stock
4 Tbsp cumin or toasted cumin
4 Tbsp salt
3 Tbsp chili powder, homemade if possible
1 Tbsp liquid smoke (optional)
2 large white onions
1 green bell pepper
1 red bell pepper
1 Tbsp adobe sauce (optional for added heat)
any other peppers to add heat to the pork

Steps:

  • 1. Cover the pork shoulder in 2 tablespoons each of salt and cumin.
  • 2. In a Dutch oven or cast iron skillet, heat up the oil and sear the pork. Make sure to sear all sides and not just the top and bottom.
  • 3. If using a Dutch oven, heat the oven up to 250 and take the Dutch oven off heat. If using a slow cooker, move the pork to it now.
  • 4. Add the stock, the rest of the cumin and salt, and all other ingredients to the pot.
  • 5. Cover and cook in oven for 6 hours. In a slow cooker, cook between 6 to 8 hours on low.
  • 6. Once done, drain the juice (I save my to make soup), pull apart meat and mix the ingredients cooked with the pork if desired.
  • 7. Add you favorite BBQ sauce or eat as is. I use Bull's Eye Memphis Style BBQ, with a tablespoon more cumin and 1/2 tablespoon homemade chili powder added to it.
