Shrimp and Okra Gumbo image

Serve this one-pot meal with quick-cooking rice or instant couscous and pass the hot sauce. To save time, look for shrimp that have already been shelled and cleaned. You can also substitute in frozen shrimp and okra.

Number Of Ingredients 12

1/4 cup vegetable oil
1/3 cup flour
1 onion, diced
2 celery stalks, diced
1 small green bell pepper, diced
4 large garlic cloves, minced
1 to 2 tablespoons Cajun seasoning, or to taste
4 cups chicken broth
One 14.5-ounce can diced tomatoes, including liquid
1 pound fresh okra, trimmed and cut into thick slices, or one 1-pound package frozen cut okra, not thawed
1/2 pound andouille sausage, sliced
1 1/2 pounds shelled and cleaned shrimp

Steps:

  • Stir together oil and flour in a large casserole, set over medium heat. Cook, stirring, until flour mixture is brown, about 5 to 7 minutes.
  • Add onion, celery, green pepper, garlic and Cajun seasoning. Cook, stirring, 5 minutes, or until softened.
  • Add chicken broth, tomatoes and their liquid, okra and sausage. Bring to boil; simmer 20 minutes.
  • Stir in shrimp; simmer 5 minutes, or until cooked.
  • Garnish with sliced scallion and lemon slices, if desired.
