SHRIMP AND GRITS RECIPE image

Number Of Ingredients 18

Grits
Prepare grits for 4-6 people, remove from heat, and add:
1/4 teaspoon white pepper
1 pinch cayenne pepper
1 cup shredded sharp white cheddar cheese
2 T. unsalted butter
salt to taste
Shrimp
1 lb. medium shrimp, peeled
6 slices of bacon
peanut oil
2 cups sliced mushrooms
fresh parsley
1 cup sliced scallions
1 large garlic clove, crushed
4 t. lemon juice
1 dash tabasco
salt and pepper to taste

Steps:

  • Rinse shrimp and set aside. Dice bacon and fry lightly in large skillet; drain and set aside. Add enough peanut oil to skillet to make a thin layer. Heat over medium flame until hot. Toss in shrimp, then mushrooms and saute about 3 minutes. Sprinkle with scallions and bacon (reserve a small amount of scallions, parsley, and bacon to sprinkle on top of finished dish as garnish); add garlic, season with tabasco, lemon juice, parsley, salt, pepper. Spoon shrimp mixture over grits and add garnish. Serves 4 people. Enjoy--yum!
