Shredded Kale Salad image

Number Of Ingredients 10

2 bunches Dinosaur/Lacinto Kale
2 cloves Garlic
1/4 cup Lemon Juice
3 tablespoons Olive Oil
1/4 teaspoon Salt
1/4 teaspoon Pepper
1/2 cup Dried Cranberries
1 cup Pecan Halves
1 1/2 tablespoons Parmesan Cheese
2 pinches Salt

Steps:

  • Preheat oven to 300
  • Spread pecans on baking sheet and toast for 8-10 minutes until fragrant and lightly golden
  • Remove stems from kale and finely chop. Place in large bowl
  • Dressing: in mini food processor, mince garlic; add lemon, oil, salt, and pepper; process until combined
  • Pecan Parmesan: in mini food processor, chop pecans until pea-size; add parmesan, oil, and salt; process until coarse crumb texture (don't over process)
  • Add dressing to kale and massage
