Shredded Carrot and Beet Salad image

1 large golden beet, trimmed, peeled and coarsely grated
3 Tbsp. organic extra virgin olive oil
2 Tbsp. HEINZ Organic Unfiltered Apple Cider Vinegar
1 tsp. grated fresh ginger
2 carrots, coarsely shredded
1/4 cup PLANTERS Dry Roasted Sunflower Kernels
1/4 cup chopped fresh parsley
1 Tbsp. sliced green onions

Steps:

  • Place beets in large bowl.
  • Whisk oil, vinegar and ginger until blended. Add to beets; mix lightly.
  • Refrigerate 30 min.
  • Add carrots, sunflower kernels and parsley; mix lightly.
  • Top with onions.
