SHERRI'S CRAFTY CARROT CAKE image

Number Of Ingredients 12

3 c. flour
2 1/2 cups sugar
1 tsp. salt
1 TBSP. soda
1 TBSP. cinnamon
1 1/2 c. canola oil
4 large eggs lightly beaten
3 tsp. vanilla
1 1/2 c. chopped walnuts
1 c.+ shreaded coconut
1 1/3 c. pureed cooked carrots (5-6)
3/4 cups drained crushed pinapple

Steps:

  • Preheat oven to 350 degrees. Grease three 9" cake pans. Sift dry ingredients into bowl, add oil, eggs and vanilla. Beat well and fold in walnuts, coconut, carrot and pineapple. Pour batter into pans. Bake 30-35+ minutes.(sometimes longer) cool on rack for 3 hours. Frost between the layers and on top and sides with cream cheese icing and top with carrot curls and then dust with sifted icing sugar. Carrotliscious!
