SESAME-CHILI CHICKEN WITH GINGERED WATERMELON SALSA image

Chicken:
2 T low sodium soy sauce
1-2 T chili sauce with garlic
1 T dark sesame oil
1-6oz skinless, boneless chicken breast halves
Salsa:
2 C diced seeded watermelon
1/4 C diced yellow bell pepper
2 T thinly sliced green onions
1 T chopped fresh cilantro
1 t peeled, grated fresh ginger
2 t mirin
1 t fresh lime juice
1/4 t salt
1 jalepeno chile, seeded and minced
1/4 t salt
Cilantro sprigs (optional)
Lime wedges (optional)

Steps:

  • TO MAKE CHICKEN; Combine soy sauce,chili sauce and sesame oil in a large self-sealing plastic bag. Add chicken to bag; seal and marinate in refrigerator for 1 hour, turning bag occasionally. Lightly spray the grill rack with nonstick cooking spray and prepare grill for medium heat TO MAKE SALSA: Combine watermelon, bell pepper, green onions, cilantro, ginger, mirin, lime juice, salt and jalapeno; cover and chill until ready to serve. Remove chicken from marinade; discard marinade. Sprinkle chicken evenly with 1/4 t salt. Grill 6 minutes on each side or until juices run clear. Remove chicken from grill; let stand 5 minutes. Cut chicken diagonally across grain into thin slices; serve with salsa. Garnish with cilantro sprigs and lime wedges, if desired. NOTE: to check grill temp, count the seconds you can hold your hand, palm side down, 2-3 inches above the rack, until it feels uncomfortable: 4 seconds for medium
