I had this recipe in my old recipe box, but had never eaten the Chinese Sesame Chicken until Mark took me to a place in MD and said I wouldn't regret trying it (I am not as adventurous as he is when it comes to eating). Now it is a favorite of mine. So this is a home version that reminds me of that evening! And it was even a favorite back then, lol.

Steps:
- Stir butter and soy together. Cut chicken into 1" cubes, add to soy and toss to coat. Crush crackers fine and stir together with ginger in a bag. Add a few chicken cubes, toss to coat. Place on cookie sheet in single layer. Bake at 450 degrees 7-9 min or until no longer pink.
