SCALLION BREAD image

Yield 2 loaves

Number Of Ingredients 7

2 cups flour
1 tsp salt
3/4 cup boiling water
2 tbls baking powder
1/2 cup cold water
3 chopped scallions
about 1/2 cup peanut or canola oil

Steps:

  • In a mixing bowl, place 1 cup flour and salt and mix well.Make a well in the flour and pour in the boiling water. Mix and knead well. In another bowl mix baking powder and remaining flour together, add cold water.ix and knead well. Combine hot and cold doughs and knoead till they are combined well.This will be sticky! Form a ball and place in a covered bowl for atleast 2 hours. Sprinkle flour on a board and divide dough in to 2 sections. Flour your rolling pin and roll into a pancake about 1/2" thick. Sprinkle with scallions and press into the dough by rolling over them. Heat 4 tbls oil in a large skillet and pan fry one cake at a time.Turn once.
