Steps:
- Parboil the sausages in water to cover for 5 minutes. Skin immediately and cut into bite-size pieces.
- Saute the onion in the butter over medium heat until it is soft and golden. Add the sausage pieces and saute for 3 to 5 minutes longer. Add the remaining liquids and simmer, uncovered, until the sauce is well reduced and slightly thickened.
- Add pepper and salt to taste and serve over hot, drained pasta with grated Parmesan cheese. Makes 4 portions.
