Sausage Sauce for Pasta image

Number Of Ingredients 7

1/2 pound sweet Italian sausages
1 small onion, chopped
2 tablespoons butter
1/2 cup tomato sauce
1/4 cup leftover walnut sauce from braised endives (see recipe) or 1/4 cup beef gravy, or strong brown stock
1/2 cup dry white wine
Pepper and salt to taste

Steps:

  • Parboil the sausages in water to cover for 5 minutes. Skin immediately and cut into bite-size pieces.
  • Saute the onion in the butter over medium heat until it is soft and golden. Add the sausage pieces and saute for 3 to 5 minutes longer. Add the remaining liquids and simmer, uncovered, until the sauce is well reduced and slightly thickened.
  • Add pepper and salt to taste and serve over hot, drained pasta with grated Parmesan cheese. Makes 4 portions.
