This is a fun sandwich that I came up with on a whim yesterday. The condiments are not mayo, not mustard, not ketchup... just hummus. I served it open-faced on a piece of toasted cracked wheat bread, slathered with hummus, some lettuce, and sliced tomatoes. Not sure what I expected, but it was really yummy. Everyone gave it two thumbs up. So, you ready... Let's get into the kitchen.

- PREP/PREPARE
- You will need a small skillet to make this recipe.
- Here is the hummus I used; however, any good hummus will work: https://www.justapinch.com/recipes/sauce-spread/dip/dip-essentials-totally-awesome-hummus.html?p=2
- Gather your ingredients (mise en place).
- Add the olives and relish to the ground beef and gently mix to combine. Then place in a cold skillet, put it on the stovetop, set the heat to medium, and sprinkle with a bit of salt and pepper.
- After the bottom begins to brown (3 - 4 minutes), flip, sprinkle with a bit of salt and pepper, and cook an additional 3 - 4 minutes. Note: I like mine a bit on the rare side, so I cut those times in half.
- PLATE/PRESENT
- Toast the bread, and slather with 2 tablespoons of the hummus. Then toss the tomatoes with the remaining hummus. Note: You might need a bit more hummus, but that is okay because hummus is a good thing. Place the lettuce on the toast, add the burger, and top with the hummus-tossed tomatoes. Enjoy.
