Salmon Pasta Salad image

Number Of Ingredients 14

1 1/2 cups pink salmon remove skin and bones
5 cups bow tie pasta cooked
1/2 cup carrot thinly sliced
1/2 cup celery sliced
1/4 cup olives thinly sliced ripe
1/4 cup green onion chopped
1/4 cup red bell pepper or green bell pepper, sliced
2 tablespoons Parmesan cheese grated
1/2 cup red wine vinegar
4 teaspoons olive oil
1 teaspoon sugar
1 teaspoon oregano
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Break salmon into large pieces. In medium bowl combine salmon, pasta, vegetables, and cheese. Combine in small bowl vinegar, oil, sugar, oregano, salt, and pepper. Pour over salmon mixture. Toss care-fully to coat. Cover and chill or serve immediately. *This Salmon Pasta salad is moderately high in fat, but the salmon and olive oil contain "good", cholesterol-fighting fatty acids. That's why I sit on the fence with the "A-" to "B+" rating.
