ROASTED PARSNIPS AND CARROTS WITH SAGE image

Number Of Ingredients 5

1 1/2 pound(s) parsnips, peeled and cut into thin strips
1 1/2 pound(s) carrots, peeled and cut into thin strips
1/4 cup(s) olive oil
1/4 cup(s) fresh sage leaves
- kosher salt and black pepper

Steps:

  • Heat oven to 400 degrees. In a large bowl, toss the parsnips, carrots, sage, oil, salt and 1/2 t. pepper. Spread on a rimmed baking sheet and roast, stirring twice, until the vegetables are gilden, 45-55 minutes. Makes 8 servings.
