Steps:
- With a vegetable peeler, shave the zuch and squash until you reach the seeds. Discard the seeds and place strips in salad bowl. Repeat peeling with carrot and place in bowl. Deseed peppers and cut into long strips. Add to bowl. In Food Processor, mince shallot and garlic. Add in vinegar and pulse for 2 seconds. In a slow stream with the food processor running, add the oil. DO NOT ADD QUICKLY. Add salt and pepper to taste Drizzle some over veggies, to liking, and store remaining vinagrette.
