Steps:
- Heat oven to 425 degrees.
- Put zucchini, thyme, rosemary, onions, garlic, salt(1/4 tsp) and 1/4 c. oil in a baking pan.
- Put eggplant, peppers, thyme, rosemary, garlic, salt (1/4 tsp)and 1/4 c. oil in another baking pan.
- Roast 60 minutes. Stir 3 times.
- Put the trays together add goat cheese.
- Put in platter with tomatoes, olives, and basil.
