Steps:
- Sprinkle shrimp with the curry powder & cayenne. In large skillet, heat the oil & cook vegetables until softened. Add shrimp & cook, stirring until they turn pink. Add the Rotel & lemon juice & coconut milk. Simmer, stirring often until shrimp is cooked through. Stir in cilantro & cook for 30 seconds.
