QUICK CURRIED SHRIMP image

Number Of Ingredients 12

1 1/4 lb extra large shrimp, peeled & deveined
1 1/2 T curry powder
1/8 t cayenne
2 T vegetable oil
1 carrot, chopped
1 C broccoli, chopped
1 med onion, chopped
1 can Rotel
1 T lemon juice
1/4 C cilantro, chopped
salt & pepper
1/2 can coconut milk

Steps:

  • Sprinkle shrimp with the curry powder & cayenne. In large skillet, heat the oil & cook vegetables until softened. Add shrimp & cook, stirring until they turn pink. Add the Rotel & lemon juice & coconut milk. Simmer, stirring often until shrimp is cooked through. Stir in cilantro & cook for 30 seconds.
