Pumpkin Chocolate Chip Cookies image

These are the perfect cookies for the fall and the holidays as they make your kitchen smell of pumpkin spice while they cook. The cookies are more cake-like when baked and delicious. They have the perfect balance of spice with a touch of sweetness from the chocolate chips. We added walnuts and they gave the cookies a crunch....

1/2 c Crisco shortening
1 1/2 c sugar
1 egg
1 tsp vanilla
1 c pumpkin, canned
1 tsp vanilla
2 3/4 c all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp pumpkin pie spice
1 tsp cinnamon
1/2 c walnuts or pecans, chopped
1 c semi-sweet chocolate chips
1/4 c powdered sugar

Steps:

  • 1. Preheat oven to 350 degrees. Line your cookie sheets with parchment paper.
  • 2. In an electric mixer, cream together shortening and sugar until fluffy and light in color.
  • 3. Add egg, vanilla, and pumpkin.
  • 4. In a separate bowl, combine flour, baking soda, salt, pumpkin pie spice, and cinnamon.
  • 5. Gradually add to creamed mixture.
  • 6. Stir in nuts and chocolate chips.
  • 7. Drop dough by teaspoonful's onto parchment lined baking sheet. Bake for 14-15 minutes or until lightly browned.
  • 8. Cool on racks.
  • 9. When cool dust with powdered sugar. Enjoy!
