Pulled Pork Taters image

While shopping in Gettysburg Pa one day, and getting very hungry we decided to stop at this lil BBQ place they had pulled beef/pork ribs taters, you know all the fixins for a BBQ. I had ordered a baked potatoe loaded with everything and chose pulled pork for in it. The thing was huge and oh my tasted ever go good, I was so full but kept wanting to finish it, I couldnt! Now everytime while in Gettysburg we stop at that lil place, well while looking through a magazine one day, I found a recipe for them and had to try it! Amazing!!! Just a smaller version didnt use the huge potatoes like the resturant did! A simple easy dinner thats very filling!!

Number Of Ingredients 14

1 (2-3lbs) - bonless pork loin
1 med - onion chopped
1 cup - ketchup
1 cup - rootbeer
1/4 cup - cider vinegar
2 Tbsp. - worchestershire sauce
2 Tbsp. - louisana style hot sauce
2 tsp. - salt
2 tsp. - pepper
1 tsp. - ground mustard
6 large - poatoes
1 Tbsp. - cornstartch
1 Tbsp. - cold water
- butter,shredded chedder cheese,sour cream,chives or whatever you would like for toppings

Steps:

  • Place roast in 5-qt slow cooker. Top with onion. Combine ketchup,root beer,vinegar,Worchestershire sauce,hot sauce,salt,pepper and mustard;pour over top. Cover and cook on low for 6 to 6 1/2 hours or until meat is tender.
  • Scrub and pierce potatoes, Bake at 400* for 50-55 minutes or until tender.
  • Remove pork;shredwith two forks. Skim fat from cooking juices; transfer to a large saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth; graduallystir into pan. Bring to boil; cook and stir for 2 minutes or until thickened. Return meat to cooking juices;heat through.
  • Cut an X in each potatoe with a sharp knife,fluff with a fork. Top with butter and pork mixture sprinkle with cheese, sour cream and chives!!
