Prairie Braised Buffalo Shanks image

If you've never tried buffalo (bison) I can highly recommend it. It's delicious and healthier than beef.

4 buffalo, shank cuts each 1 . 5 inches thick
2 tablespoons vegetable oil
1 cup barley
2 quarts cold water
3 garlic cloves, minced
1 bay leaf
1 large onion
2 large carrots, peeled and sliced
2 celery ribs, sliced thinly
1 1/2 teaspoons salt
1/2 teaspoon pepper, fresh ground
5 fresh tomatoes
1/2 cup fresh parsley, chopped

Steps:

  • In a large pot, brown shanks over med-high heat in veg oil.
  • Add onion, garlic and carrots.
  • Stir in water, barley.
  • Add salt and pepper to taste.
  • Add coarsely chopped tomatoes.
  • Bring to a boil and reduce heat.
  • Cover and simmer on low for 2.5 hours.
  • Stir in fresh parsley during final 20 minutes of cooking.
  • Remove meat; remove bay leaf.
  • Taste and adjust seasonings.
  • Enjoy!
