POTATO WEDGES WITH DIPPING SAUCE image

Number Of Ingredients 12

2 large baking potatoes
2 teaspoons olive oil
2 teaspoons balsamic vinegar
2 tablespoons Parmesan cheese
2 tablespoons bread crumbs
1 teaspoon Italian seasoning
1/4 teaspoon salt & pepper
Dipping sauce
1/2 cup light sour cream
1/4 teaspoon garlic powder
1 tablespoon fresh chives
A few drops of hot sauce

Steps:

  • In a small bowl mix the oil and vinegar. In another combine the cheese, bread crumbs, Italian seasoning, salt and pepper. Lightly spray a baking sheet with Pam. Cut potatoes lengthwise and then each side into 4 wedges. Brush the potatoes with oil and vinegar mixture the dredge in the breading mixture. Put on the pan skin side down. Bake at 425 for 30 minutes or until crisp. Dipping sauce. Mix together 1/2 cup light sour cream with 1/4 teaspoon garlic powder and a tablespoon of fresh chives
