POTATO PORK SKILLET image

Number Of Ingredients 11

1 lb pork tenderloin, cut in 1/4 inch slices
2 tbsp butter
1 can (14.5 oz) chicken broth
8 small red potatoes, quartered
1 tbsp Dijon mustard
2 tsp Worcestershire sauce
1/4 tsp salt
1/8 tsp pepper
1 cup sliced fresh mushrooms
1/2 cup sliced green onions
2 tbsp flour

Steps:

  • Brown pork in butter on both sides over med-high heat. Remove & keep warm. Set aside 1/4 cup of broth. Add potatoes, mustard, sauce, salt, pepper, & remaining broth to skillet. Bring to a boil. Reduce heat, cover & simmer to 15-17 min. or until potatoes are tender. Stir in mushrooms, onions, & pork. Cover & simmer 5 min. longer or until meat is no longer pink. Combine flour & reserved broth; add to pork; bring to a boil; cook & stir for 2 min. or until thick.
