POTATO AND CARROT MASH WITH SALMON image

Yield 1 3/4 cups

Number Of Ingredients 6

2 cups peeled and chopped potatoes
1 cup peeled and sliced carrots
3½ Tbs. milk
1 Tbs. butter
1/3 cup shredded Cheddar cheese
3½ to 4 oz. salmon fillet, skinned

Steps:

  • 1. Put the potatoes and carrots into a saucepan, cover with boiling water, and cook until the vegetables are tender, about 20 minutes. Drain and mash together with 3 Tbs. milk, the butter, and the cheese. 2. While the vegetables are cooking, put the salmon into a microwave dish with the remaining ½ Tbs. milk, and microwave on high for 1½ minutes. (If you don't have a microwave, you can steam the fish over the vegetables for 5 to 6 minutes.) Flake the fish, checking to make sure that there are no bones in it. 3. Mix the fish into the potato and carrot mash.
