OUR FAMILY'S ALL TIME FAVORITE; this is a true Southern Pudding it has been in the family as long as I am old. . . "This is from Scratch". Out of my recipe file box of favorites that I use often. you can make variations to this for Coconut or just plain Vanilla Pudding. You can cheat . . (but I didn't say that) and use Vanilla...

1/2 C sugar or sub. splenda
1/3 C flour
3 egg yolks
2 C whole milk
mix well and cool over med. heat. stir constantly
1 Box vanilla wafers cookies
5 - 6 bananas sliced
1 tsp vanilla
just a pinch of salt

Steps:

  • 1. Place layer of wafer cookies on bottom of medium sized mixing bowl Slice Bananas over top of cookies.
  • 2. Mix 1st 4 ingredients together, in sauce pot or Double boiler, Cook over med. heat. Stir constantly with wire whip or wooden spoon, so it does not scortch the bottom, until this thickens, about 15 min. usually
  • 3. Remove from heat. add vanilla, stir well.
  • 4. Immediately pour over cookies and bananas, layer 3 times. cookies- bananas- pudding. Cover with Plastic wrap so it does not form a thick film on top. Store in refer. Now Enjoy real Homemade pudding.
  • 5. HUNT: Variations; add coconut about 1/2 C to pudding for Coconut Pudding and (omit vanilla,) add Coconut Extract. I use a litte toasted coconut on top of pudding. or Vanilla Pudding asabove omit cokies and bananas. You can top with Cool whip, whip cream or meringue (sp)
  • 6. TOPPING: I usually have Whipped Cream, or Cool Whip topping. OR . . You can also add a topping of Meringue, then bake 2-3 min just til golden brn. Chill in refer til serving time.
