PORK TENDERLOIN WITH MAPLE-MUSTARD GLAZE image

1/2 cup maple syrup
1/4 cup stone ground mustard
Pinch cayenne pepper
1/4 cup cornstarch
2 tablespoons sugar
1 tablespoon table salt
2 teaspoons ground black pepper
1 pork tenderloin1 (1 1/4 to 1 1/2 pounds)
2 tablespoons vegetable oil

Steps:

  • 1. Adjust oven rack to middle position and heat oven to 375 degrees. In a small bowl, whisk together maple syrup and mustard. Whisk cornstarch, sugar, salt, and black pepper in another small bowl until combined. Transfer cornstarch mixture to rimmed baking sheet. Pat tenderloin dry with paper towels, then roll in cornstarch mixture until evenly coated on all sides. Thoroughly pat off excess cornstarch mixture. * 2. Heat oil in 12-inch heavy-bottomed nonstick skillet over medium-high heat until just beginning to smoke. Reduce heat to medium and place tenderloin in skillet. Cook until well browned on all sides, 8 to 12 minutes. Transfer tenderloin to wire rack set in rimmed baking sheet. 3. Brush tenderloin with about 1 tablespoon of maple-mustard glaze. Roast in oven until instant read thermometer in thickest part registers 140-145 degrees about 20-25 minutes, taking it out every 10 minutes and brushing it with a tablespoon of glaze. 4. When cooked, take out of oven, brush with glaze and let rest for 5-10 minutes before slicing. Pour rest of glaze over slices.
