Pork Medallians With Hot Pineapple Glaze image

Number Of Ingredients 6

1 pound pork tenderloin
1/4 teaspoon salt
1/3 cup pineapple or orange marmalade spreadable fruit
2 teaspoons cider vinegar
1/2 teaspoon grated ginger root
1/4 teaspoon crushed red pepper, if desired

Steps:

  • 1. Remove fat from pork. Cut pork into 1/4-inch slices. Sprinkle both sides of pork with salt. 2. Spray 12-inch nonstick skillet with cooking spray heat over medium-high heat. Cook pork in skillet 5 to 6 minutes, turning once, until no longer pink. Remove pork from skillet keep warm. 3. Mix remaining ingredients in skillet heat to boiling. Boil and stir 1 minute. Serve sauce over pork.
