Piña Colada Yogurt image

I love Greek Yogurt - it has loads of protein, few carbs, and the non-fat kind has no fat, but lots of creaminess and full flavor. I hadn't tried pineapple before in yogurt - but I had some fresh pineapple leftover from making a pizza the night before, so here is my breakfast creation.

1 container (5.3 oz) plain non-fat greek yogurt
1/3 c chopped fresh pineapple
1/8 tsp coconut extract
1 pkg stevia or other noncaloric sweetener
1 pinch flaked coconut (optional)

Steps:

  • 1. If desired, microwave the pineapple for 30 seconds on high power. It helps break it down, and it blends better, but it's not necessary.
  • 2. Stir together the pineapple, yogurt, stevia, and coconut extract. If desired, top with just a pinch of flaked coconut. Serve immediately.
  • 3. Nutritional facts (including coconut): 152 calories, 2 grams fat, 22 grams carbohydrates, 1.7 grams fiber, 17 grams sugar, 15 grams protein, 77 mg sodium.
