Steps:
- Sear pork in 2 T olive oil, remove from pan.
- Add chicken broth and pineapple juice and scrape up brown bits. Put in crock pot.
- Add 2 cups of pineapple (large chunks) to crock pot.
- Place pork on top of pineapple and season with salt and pepper (pineapple forms a kind of bed to keep pork off bottom).
- Sautee thick slices of onion and garlic over medium heat in 2T olive oil. Place on top of pork. Top pork with rest of pineapple chunks.
