Pineapple Pecan Pie image

2 Tablespoons sugar
2 Tablespoons flour
Dash salt
1 can (8 oz.) crushed pineapple, drained (save 2/3 cup syrup)
1 egg, well beaten
16 large marshmallows, quartered
2/3 cup crushed pineapple
1/2 cup chopped pecans
1 pint Cool Whip
1 graham cracker crust

Steps:

  • Mix sugar, flour and salt. Add pineapple juice, blend, and cook over low heat until thick, stirring constantly.
  • Add a little hot mixture to egg; stir into remaining hot mixture; cook until thick. Add marshmallows; stir until marshmallows melt completely. Add pineapple & pecans; chill 1 hour.
  • Fold into whipped cream. Pour into pie pan lined with graham cracker crust. Chill 30 minutes before serving.
