Pineapple & Coconut Cake image

Pineapple & Coconut Cake...and oh no...it's not any old cake....come and see what I did to it! It's very light & fluffy inside, moist and the flavours are really incredible! Have a go making this and I'm sure you will like it lots too.

1 c butter, softened
4 medium eggs
3 1/4 c all purpose flour
2 1/2 tsp baking powder
1 c coconut milk, unsweetened
1 Tbsp vanilla extract
2 c pineapple, chunks
1/2 c coconut milk, unsweetened (topping)
8 oz creamy cool whip or fresh whipped cream
1 tsp vanilla extract (for the cream)
