When I was growing up it wasn't really Christmas until Mom brought home Archway's Pfeffernuesse cookies. Once I got married I decided to try to make my own. They turned out quite well although they taste nothing like Archway's. Now that Archway no longer makes them I have started baking my own again. I've gotten rave reviews on them. These cookies have a denser texture than Archway's but they are very rich tasting.

Number Of Ingredients 11

3/4 cup(s) light molasses
1/2 cup(s) butter
2 - beaten eggs
4 1/4 cup(s) sifted flour
6 1/2 cup(s) granulated sugar
1 1/4 teaspoon(s) baking soda
1 1/2 teaspoon(s) ground cinnamon
1/2 teaspoon(s) ground cloves
1/2 teaspoon(s) ground nutmeg
dash - black pepper
- confectioner's sugar

Steps:

  • In a small saucepan combine molasses and butter. Cook and stir constantly until butter melts. Transfer to large bowl. Put aside and cool to room temperature.
  • Stir in 2 beaten eggs.
  • In separate bowl mix together flour,granulated sugar, baking soda, cinnamon, cloves, nutmeg and pepper.
  • Add flour mix to molasses mix in stages and mix until well incorporated with wooden spoon.
  • Wrap in wax paper and chill for 1 hour.
  • Preheat oven to 375 degrees.
  • Bake on greased cookie sheet for 12 minutes and cool.
  • Once cool roll each cookie in confectioner's sugar being sure to coat well.
