PEPPERED SHRIMP image

Pepper shrimp
900 grams (2 lbs) shrimp in the shell
3 large garlic cloves, minced
3 Scotch Bonnet peppers, seeded and sliced*
2 tablespoons salt
2 tablespoons vinegar
80 ml (1/3 cup) cooking oil

Steps:

  • Heat the oil in a heavy frying pan and add the garlic, peppers and salt. Stir until fragrant and add the shrimp. Stirring continuously, cook for 3 to 5 minutes, add the vinegar, and cook for 3 more minutes or until shrimp are cooked through. * For less heat, slice the peppers or just cut them in half rather than mincing. If you can't find Scotch Bonnet peppers, substitute habanero peppers. If neither Scotch Bonnets or habaneros can be found, using the spiciest peppers you can find, and you may want to use more than three.
