Steps:
- 1. Saute chicken in 1 Tbsp olive oil in a med skillet for 5 to 6 min or until done.
- 2. Whisk together the vinegar and mustard in a small bowl. Gradually whisk in 6 Tbsp olive oil until smooth. Season with salt and pepper to taste.
- 3. Cook Pasta according to package, drain. Toss together pasta,chicken, vinegar mix, spinach, and remaining ingredients in a large bowl. Season with salt and pepper. Serve hot or cold!
