PEAR AND FETA SALAD WITH CANDIED PECANS image

Number Of Ingredients 16

Salad:
1 bag Italian lettuce, or 1 bag baby spinach
1 bag mixed spring lettuce
3-4 pears, diced
1 c crumbled feta cheese
1 1/2 c Craisins
1 c pecans, coarsely chopped
1/4 c sugar
Dressing: (enough for 2 salads)
1/2 c red onion, chopped
1 c sugar
2 tsp dijon mustard
1 tsp salt
2/3 c white wine vinegar
2 c vegetable oil
3 tbs poppy seed

Steps:

  • Dressing: Blend first 5 ingredients in blender. Add oil and blend again. Stir in poppy seeds. Salad: Put chopped pecans in saucepan with sugar. Heat on low heat until sugar is melted, but not until it disappears. Remove from heat and set aside to cool. Toss other ingredients in bowl and top with cooled pecans. Use 1/2 of prepared dressing and toss again.
