Pasta with White Beans and Fresh Herbs image

A great friend gave me this recipe many years ago and it is a dinner time staple at my house. Macaroni, parmesan cheese, fresh herbs, garlic and tomatoes make this dish a family favorite !

Number Of Ingredients 17

1 can(s) diced tomatoes, undrained
1 onion, diced
1 carrot, diced
2 garlic cloves, minced
2 Tbsp chopped fresh parsley
2 tsp chopped fresh basil or 1/4 tsp. dried basil
1 tsp dried oregano
1/4 c olive oil, extra virgin
1 tsp salt
1/2 tsp pepper
2 tsp sugar
1 can(s) 16 oz cannellini beans or white kidney beans, drained
1 can(s) garbanzo beans, drained (optional) i love them
8 oz macaroni or what small pasta you have on hand
2 Tbsp margarine
1/4 c parmesan cheese, shredded
garnish with fresh herbs

Steps:

  • 1. Drain tomatoes, reserving 1/4 cup liquid.
  • 2. Saute onion and next 5 ingredients in hot oil in a large skillet until onion is tender.
  • 3. Add tomatoes, reserved liquid, salt, pepper, and sugar.
  • 4. Cover, reduce heat and simmer for 10 min.
  • 5. Stir in beans; recover and simmer another 10 min.
  • 6. Toss cooked macaroni with butter:; top with bean mixture and sprinkle with parmesan cheese.
  • 7. Serve immediately with crusty French bread. Garnish as desired, I use fresh herbs.
