PASTA WITH ASPARAGUS, SUN-DRIED TOMATOES AND GOAT CHEESE image

Number Of Ingredients 10

2 T evoo
1 c thinly sliced gr. garlic or leeks
2 cloves garlic, minced
T chopped fresh thyme
1/2 c fruity white wine
1/2 c oil-packed sun-dried tomatoes, chopped
12 oz dried corkscrew or penne
1/2 lb. fresh asparagus, chopped
s&p tt
4 oz soft goat cheese

Steps:

  • Bring large pot of water to boil. In large skillet, heat oil over med. Add green garlicand cook until softened, about 3 min. Add garlic, thyme, wine and sun-dried tomatoes. Cook 1 min, remove from heat, set aside. Boil pasta, 2 min before pasta is al dente, add asparagus pieces and cook just until tender. Drain pasta and asparagus, reheat sauce and add to pasta tossing to coat. Season with s&p and goat cheese.
