PASSOVER SWEET POTATO, GOLDEN BEETS, AND ORANGE TZIMMES image

Number Of Ingredients 10

4 lbs sweet potatoes, peeled and cut into 2" chunks
3 lbs golden beets, peeled and cut into 2" chunks
4 seedless oranges, peeled and cut into 1" chunks
1/2 cup balsamic vinegar
1/2 cup sweet red wine
3 TBS EVOO
2 tsp kosher salt
1 tsp ground black pepper
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg

Steps:

  • preheat oven to 375 degrees combine all ingredients in roasting pan and toss well. spread mixture into single layer. cover with foil, and bake for 1 hour. remove foil and cook for 20 minutes more until potatoes and beets are very tender. keep warm until ready to use.
