How to make Oven Baked Mini Omelets (from the One Pot Chef)

Number Of Ingredients 7

8 eggs
1/4 cup milk
1 teaspoon oil
1/2 teaspoon baking powder
diced onion, if desired
diced ham, bacon or sausage (your choice)
grated cheese

Steps:

  • Saute onion and ham until onion is translucent If using bacon or sausage, cook and crumble.
  • spray 12 cup muffin tin with cooking spray
  • put onion and meat of choice in bottom of each cup
  • In large bowl, whisk together eggs, milk, oil and baking powder
  • Divide egg mixture evenly over muffin tins (do not stir in other ingredients)
  • sprinkle grated cheese on top, if desired.
  • Bake in pre-heated 375 degree oven for 20 to 25 minutes until golden brown.
  • Allow to cool for 5 minutes, serve.
  • Can freeze in freezer bags, microwave for a couple of minutes.
