For the bread machine:
1 1/3 TB yeast
1/3 cup sugar
1/3 cup shortening (I use butter)
1 cup warm water
2 eggs
3 1/3 cups flour (I use bread flour or half wheat/half bread)
1 1/3 tsp salt
Put ingredients in bread machine as directed by manufacturer. Mix on dough setting, remove and put in oiled bowl. Cover and let rise till doubled, roll out and let rise second time. (I usually mix the rolls the night before and put them in the frig overnight in a covered, Tupperware bowl. Then I roll them out about 2 hours before I want to bake them.) Bake at 340 degrees for 10 - 15 minutes. Makes about 24 rolls.

Steps:

  • Regular mixer: 2 TB yeast ½ cup sugar ½ cup shortening (butter) 1 ½ cups warm water 3 eggs 5 cups flour 2 tsp salt Dissolve yeast and ½ tsp sugar in ½ cup warm water and set aside. Cream butter and sugar, add well beaten eggs, remaining 1 cup warm water, and yeast mixture. Beat together with electric beater. Add flour and salt in 3 batches, continue beating 5 minutes until glossy. Cover and let rise 1 hour. Punch down. Cover bowl with oiled plastic wrap and secure with rubber band till tight. (I usually put it in a Tupperware bowl with a lid.) Cool overnight in the frig. Punch down and roll out about 2 hours before baking. After they have risen, bake at 340 degrees for 10 - 15 minutes. Makes about 36 rolls.
