ORANGE-SWEET POTATOES image

Number Of Ingredients 10

2 - 29oz cans yams
3 golden delicious (or other baking apple) peeled and grated.
Lemon juice - to toss with shredded apples
1/4 c butter
1/2 c brown sugar
1 t cinnamon
1/2 t nutmeg
1/2 c OJ concentrate (undiluted)
1/4 t orange oil
1/2 c chopped, roasted walnuts

Steps:

  • Mash sweet potatoes. Add apples, OJ juice concentrate, and orange oil. Melt butter and add brown sugar,, cinnamon and nutmeg. Mix into sweet potatoes/orange mixture. Cook @ 30 minutes in 350 oven. Top with roasted walnuts.
